Our flavored oil is obtained for the most part from olives harvested late so that the bitter and spicy taste of the olive does not dampen that of lemon, rosemary and chilli. We chop the best untreated organic lemons, chillies and remove all the woody twigs of rosemary and put them directly in the malaxer to macerate together with the olive paste.
